Course Description
Culinary trends change rapidly, and for those working in the catering industry, or looking for a job in that sector, it is essential they keep up to date with these changes in order to stay competitive.
This course explores in detail 4 different trends in food - plant based, reduced sugar, new grains and fermentation. Each week learners will expand their understanding, skills and confidence in these areas and be able to cook or prepare recipes for each trend.
Learning objectives:
Explain 4 new culinary trends and why they have come about
Identify new ingredients as alternatives to meet new trends
Demonstrate how to utilise these ingredients in new recipes
Apply this knoweldge to make 6 new recipes with less sugar, plant based, fermentation techniuqes and using different grains
