Course Description

Are you looking to gain new skills, or upskill to gete a better job in the catering industry? The you've come to the right place. This course is aimed at those looking to gain skills to find work in the catering sector. We will cover all the essential elements of working in a kitchen and will equip learners with the knoweldge, skills and confidence to apply for a job in the catering industry. By the end of the course you'll be able to: Describe working in a commercial kitchen identifying roles and responsibilities and equipment. State what food safety systems, HACCP & COSHH need to be in place for a successful kitchen or café, and why they are important. Describe the routes through a kitchen, identifying key hazards and risk points along the way. Demosntrate basic knife skills including sharpening, safe handling and 3 different cutting techniques. Describe the principles of menu planning incorporating sustainability guidelines, recipe costing and how to scale up recipes. Practice basic cooking skills including sauces, baking, frying, sauteing, grilling and steaming. State the principles of working as a professional chef or front of house server. Demonstrate effective customer care techniques to ensure repeat custom.
